Roasted Cauliflower with Pesto

For any pesto lover out there I urge you to try this. The caramelisation of the roasted cauliflower with the light, zesty, moorish deliciousness of the pesto will make you do a little wiggle for this tastes SO GOOD!!

Eating cruciferous vegetables such as broccoli, cauliflower etc. are so good for the body’s detoxification processes and that in turns means they are very good for us to eat! Sometimes although lovely, smothering cauliflower in cheese kind of counteracts this nutritional benefit, so try smothering the cauliflower with pesto instead. The Creation

  1. Roughly chop the cauliflower and spread over a baking tray.
  2. Drizzle the olive oil.
  3. Bake for 25-30mins until slightly golden & soft.
  4. Whilst the cauliflower is baking, make the pesto, use my super quick pesto recipe.
  5. In a bowl drizzle the pesto over the cauliflower, mix well.
